Summer Grilling Marinade

Summer is arguably one of the easiest seasons for simple, quick dinners. Just marinade some meat and veggies during the day and toss them on the grill at night. It's also a great way to keep meals lighter and healthier. This marinade is easy and delicious so try it tonight with beef, chicken or shrimp!

You can season it to taste. I like it spicy so I add a good amount of red chili pepper marinade.

1 Red Chili Pepper with seeds use more if you want spicier flavor

3-4 garlic cloves (garlic powder can be substituted)

1-2 tablespoons of coarsely ground pepper.

1/3 cup of lime juice

4 tablespoons of olive oil

1/3 cup of honey or more to taste

3 tablespoons of Hungarian paprika

Feel free to sweeten or make spicier as desired.

Put your meat in an air tight container and marinade over night. Turn container in the morning so all of food is marinated.

  • Chicken should be baked for 20-30 minutes at 350˚ and then put on grill turning often so not to burn.

  • Red meat should be grilled to preferred temperature.

  • Shrimp 2 ½ to 3 minutes each side. When shrimp turns reddish pink and is not translucent it is done.

This is a great recipe to grill as kabobs with green, red and yellow peppers, onion and tomatoes. I make grilled corn on the cob when I do it. It is good with all kinds of rice as well.
